Silly, Spooky, Cinnamon Cupcakes

The little gremlin and I had a lot of fun making cupcakes yesterday. She loves to cook with me, but unfortunately doesn’t get to do that as often as she’d like to. (Every meal, every day if I let her!)  I do plan on including her more often though, and this was a good start for us.

I helped her measure out  of  the ingredients and let her put them in. She even did the premix with a fork and then held on while I used the mixer. She’s gotten over not liking to that and the noise doesn’t bother her as much as it used to so I think we will have lots of baking experiments in our future.

After the cupcakes baked and cooled for a little bit I let her decorate a few of the cakes, and did a few myself. We were also sure to save a couple for Big sis to decorate when she got home from school.

This was a fun once in a while treat for them to have. We made the cake from scratch but the frosting was store bought.(Box top time, you know.) I think cream cheese frosting would be good with this type of cake but chocolate went really well with it. The recipe is basic and I change it up sometimes by adding vanilla or lemon extract instead of the cinnamon. Cinnamon is my favorite though.  Here’s the recipe if you think you’d like to give this a go:

Cinnamon Cupcakes:  

2 1/4 cups all purpose flour

1 1/2 cups sugar

1/2 cup butter or margarine, slightly softened

1 1/4 cups milk

3 1/2 teaspoons baking powder

1 teaspoon salt

1- 2  teaspoons cinnamon(depending on just how cinnamon-y you want it to be (I use around 1 1/2 usually

3 large eggs

Heat oven to 350 degrees

Mix together all ingredients

Pour into cupcake pans, bake for 30 minutes.

Once cooled, frost and decorate as desired using assorted candies. :) Have fun with it.

Nursery Rhyme Partay

Last Friday we partied down like it was 1995…okay maybe not, I don’t really remember much about 1995 if I’m being honest. We did have a nursery rhyme party to end a week of nursery rhyme fun though, and it was pretty neat if I say so myself. :)

To make our party festive I made some fun sheep cupcakes. Each was made with two cupcakes pushed together. The sheep’s wool is made up of large marshmallows that I cut up into smaller pieces, but mini marshmallows would be much easier. (Or near by store just happened to be out of those.)

I also made a Little Bo Peep cake to go with the cupcakes. We also had hot dogs and little boy blue haystacks. It was a fun after school surprise for my oldest to come home to and pretty easy to throw together on a whim.

 The book we used last week to learn about nursery rhymes was Mary Engelbreit’s Mother Goose. I’m a huge fan of Mary’s illustrations and bought this book for my oldest’s 1st birthday. I love her take on the nursery rhymes that I grew up with myself. I have enjoyed reading the rhymes to my kids and then doing the activities or snacks that go with them. I think the kids got a lot out of doing this and I enjoyed it too. I can’t wait to try this same approach with other books too. :)

Little Boy Blue Lunch

This is a super easy idea for a nursery themed lunch or dinner. I start with potatoes that have been peeled and cut into inch thick strips. I bake these in a sprayed or baking pan at 400 degrees for one hour. They take between 45 minutes to an hour, based on their thickness. Once they have cooled a little I stack them to form a haystack. Three potatoes going one way form the base and are topped by three potatoes going the opposite. You continue stacking decreasing the number of potatoes as you go, 3,3,3,3,2,2,2,2 til you end with one potato on top. My littlest one loves just these with ketchup but I like to add a grilled cheese on the side.

This one shown goes with the little boy blue theme I think. :)
