Silly, Spooky, Cinnamon Cupcakes

The little gremlin and I had a lot of fun making cupcakes yesterday. She loves to cook with me, but unfortunately doesn’t get to do that as often as she’d like to. (Every meal, every day if I let her!)  I do plan on including her more often though, and this was a good start for us.

I helped her measure out  of  the ingredients and let her put them in. She even did the premix with a fork and then held on while I used the mixer. She’s gotten over not liking to that and the noise doesn’t bother her as much as it used to so I think we will have lots of baking experiments in our future.

After the cupcakes baked and cooled for a little bit I let her decorate a few of the cakes, and did a few myself. We were also sure to save a couple for Big sis to decorate when she got home from school.

This was a fun once in a while treat for them to have. We made the cake from scratch but the frosting was store bought.(Box top time, you know.) I think cream cheese frosting would be good with this type of cake but chocolate went really well with it. The recipe is basic and I change it up sometimes by adding vanilla or lemon extract instead of the cinnamon. Cinnamon is my favorite though.  Here’s the recipe if you think you’d like to give this a go:

Cinnamon Cupcakes:  

2 1/4 cups all purpose flour

1 1/2 cups sugar

1/2 cup butter or margarine, slightly softened

1 1/4 cups milk

3 1/2 teaspoons baking powder

1 teaspoon salt

1- 2  teaspoons cinnamon(depending on just how cinnamon-y you want it to be (I use around 1 1/2 usually

3 large eggs

Heat oven to 350 degrees

Mix together all ingredients

Pour into cupcake pans, bake for 30 minutes.

Once cooled, frost and decorate as desired using assorted candies. :) Have fun with it.

Let them eat Cake..or maybe Donut Cupcakes

I’ve been trying to stay away from baking lately. Mostly because the last time I did any baking I made sure that I stayed under my calorie limit…but I also had a slice of cake every day. (Probably not the best idea nutrition-wise?)

But I love baking so when I saw the Gracious Pantry’s clean eating donut recipe I HAD to try it. (C’mon 118 calories, 3 grams fat how could I say no?)Even though I didn’t have a donut pan.

So I googled Donut cupcakes and it turns out there is such a creature. These were made following Gracious Pantry’s recipe exactly. The nutty ones are her take on decorating them. I used strawberry simply fruit spread and some crushed cocoa almonds on top. I got the idea for the powered donut/jelly one from  Coconut & Lime. And the glazed was my idea, it’s just 2% yogurt and powdered sugar. For the sake of my blog and you (you’re welcome) I tasted a third of each type. Gracious Pantry’s topper was the best. Coconut & Lime came in for a close second and glazed followed for third.

Now if you’ll excuse me I have a few extra donut cupcakes to deliver to my sister’s house I think. ;)
