I function better with a meal plan. So much better. My grocery bill isn’t crazy high and we actually use everything we bought before it goes bad. Last week I never got around to making one and I remembered again why this is such an important thing for me to do once a week! Because I hate waste and spending more than I need to really annoys me too.
Monday: Chili baked potatoes and broccoli (I used the recipe to make Engine 2 veggie chili last week and I had leftovers)
Tuesday: Pasta with mushrooms and bell peppers
Wednesday: Stuffed bell peppers. I got this idea from a magazine,I think it was Whole Living but you can find it on Martha Stewart’s website now. I use brown rice instead of wild and I don’t use oil-it doesn’t need it! (The kids won’t eat the bell peppers but I make extra rice and they have that with veggies.)
Thursday: Bean burritos and avocado salad (I’m using this recipe for oil free tortillas again.)
Friday:Pizza Night. The oil free bread recipe I use doubles as a pizza crust recipe too.
Saturday: Leftovers We are having a Mardi Gras party today at two so I’m not sure how hungry we’ll be for dinner but if we do get hungry I know we’ll have leftovers from the week.
Sunday: Vegan Enchiladas (finally a recipe that’s my own! You can find that here.)
